INGREDIENTS:

2 cups all-purpose flour

1 cup granulated sugar

1¼ cup brown sugar

1 tsp baking powder

1 tsp baking soda

1 tsp salt

2 tsp cinnamon

1 tsp nutmeg (add 1 additional tsp in case you’re a nutmeg lover)

½ tsp floor cloves

1 cup olive oil

4 eggs

1 tsp vanilla bean paste (or vanilla extract)

½ cup butter, melted + 2 tbsp butter

2 apples, 1 peeled and thinly sliced and 1 peeled and grated (use a cheese grater)

Instruction:

Preheat your oven to 350°F (175°C). Line the underside of a cake pan with parchment paper for simple launch.

Make the batter: In a big mixing bowl, mix the flour, sugar, 1 cup brown sugar, baking powder, baking soda, salt, and spices. Add the olive oil, eggs, vanilla bean paste, melted butter, and grated apple. Combine till simply mixed—don’t overmix.

Put together the caramelized apple base: In a small saucepan, soften the two tablespoons of butter with the ¼ cup brown sugar over medium warmth. Stir till it begins to bubble and barely thicken, about 2–3 minutes. Take away from warmth.

Assemble the pan: Pour the caramel combination into the parchment-lined cake pan. Organize the sliced apple over the caramel in a single layer. Then pour your cake batter excessive.

Bake: Bake for 45–50 minutes, or till a toothpick inserted within the middle comes out clear.

Cool and serve: Let the cake cool within the pan for 10–quarter-hour earlier than inverting onto a serving plate. Serve heat or at room temperature.
